Fresh Tomato Soup

Ingredients:

  • 4 lbs fresh tomatoes peeled, seeded, and coarsely chopped
  • 1/2 cup vegetable broth
  • 1/4 cup chopped onion
  • Salt to taste

Preparation:

  1. In a medium non-reactive saucepan, combine all ingredients.
  2. Bring to a boil over high heat.
  3. Reduce heat to medium and cook until onion is tender, about 15 minutes.
